Just a follow up on this post... if you have the latest update of DT Register, you'll find this issue has been resolved. The number of fields that display in a view now correctly follows the pagination settings of Joomla configuration. Plus you can modify it in the fields display to show more fields if necessary. So if you need to drag from one page of fields to another page, you can just modify the number displayed to get them on the same view.
