We have a set standard for all events created and find that we simply do not need (at this time) many of the available options in the event creation window. Because we have multiple users that create events in the calendar, I have found that I am constantly monitoring and correcting the fields chosen for events e.g. show attendees, permitting the cancellation option (they miss that all the time)

That said, I would like to see a way that I could restrict/remove the fields that are not relevant to us so that our event creators have less to sift through; at the same time, restrict edit rights so that I can set-up "unchangeable" fields that are defaults for every event.
