Is it possible to grey out a check box option or remove the box so that users can see what is says, but not select it? In my case, the option greyed out is no longer available. (The event is not full.) For example, people are signing up for an event and select their t-shirt size but size medium is no longer available.

Make sure you have the very latest build of DT Register... as it should "gray out" radio button and checkbox field values once the selection limit is hit.

The option isn't clickable now, but it is indents and not greyed out. Hopefully people will not get too frustrated by this.

Hmmm wonder how that looks then in the case of select lists - perhaps even less clear. How about if instead as well as the indenting text got added in front of the original option - something like NO LONGER AVAILABLE... People could then customise that with the language manager to whatever makes sense on their site?
