Just select the field name to edit and then select whether or not to include it.

I don't think that will solve the problem since it is a single drop down field that is printing all the extra information. I'm not sure how to solve that issue.
For the logo in the email, you will want to make sure the link to your graphic is an absolute URL (ie, includes the "
www.yoursitename.com/
...."). You will have to view the html of the email message when you are composing it to add it. Otherwise, when the person receives the message, their email program won't know where to find the graphic.
For the "Next Step" buttons, I'm not sure what you are referring to. On the Mac and PC I have, the Next Step buttons all show as just regular html buttons. I'm using 2.7.3c though so maybe it is an issue with an older version.
